Interesting shochu from Hanawa Town.
Hanawa Town, Higashishirakawa District, Fukushima Prefecture.
This is home to Oku-Kuji Hanawa Distillery, which produces the authentic barley shochu Hanawa Mizumari, Hanawa Genmari, and Hanawa Tomari.
Originally, this location manufactured shochu that was beloved by the town's residents,
but production ceased over a decade ago.
However, the desire to revive that shochu grew strong,
and so the Oku-Kuji Hanawa Distillery was established in the exact same location as before.
Perhaps this is the destiny of Hanawa Town, located in the Tohoku region yet possessing a climate well-suited for shochu production.
Brewed with hard water.
Hard water, refined by the Abukuma Mountains and flowing into the Kuji River system, is drawn from deep underground in Hanawa Town.
This mineral-rich hard water gives the shochu a distinct flavor and a clean finish.
Barley from Fukushima Prefecture.
We use 100% Fukushima Prefecture barley, also grown in Hanamachi. Local farmers take pride in knowing the barley they cultivate will become shochu,
and they participate in a portion of the production process, from preparing the raw ingredients to the brewing work at the distillery.
Built by a team.
Our preparation process is carried out by a small, elite team led by the production manager.
From ingredient selection to koji making, fermentation management, distillation, and filtration, we devote ample time and effort to every single step of the process.
A distillery that takes on challenges.
We are committed to using local ingredients and water. We innovate aromas and flavors.
And we propose free ways of drinking. Oku-Kuji Hanawa Distillery aims to create and disseminate new forms of shochu.
